I have made this stuff and it is quite tasty and easy AND quick! And since the cabbage is just barely cooked, you won't have that stinky "cabbage" smell around the house.

Easy Cabbage Roll Meatball Soup

½ lb Lean ground beef
½ lb Ground pork
1 Egg, beatenI (I recommend 2 or three; keeps the meatballs more together
¾ cup long grain rice uncooked
1 small sweet onion, minced (very finely minced)
2 cloves garlic, minced (I add more)
1 tsp dried thyme

2 tbsp olive oil

64 oz chicken stock
1 28oz can diced tomatoes (do not drain)
4 cups Cabbage, shredded

Chopped parsley or chives for garnish



Combine ground beef, pork, egg, rice, onion, garlic and dried thyme. Form into golf ball sized meatballs (approx 20).

Heat oil in dutch oven on medium heat. Add meatballs and cook til evenly browned.

Add all remaining ingredients and bring to boil.

Reduce heat and simmer for 20 minutes.

Serve topped with freshly chopped herbs and crusty bread.
